We continued on with a flaky, tender fillet of tamari-glazed sablefish in a singular gooseneck barnacle broth with wild rice, snap peas, and chive oil – absolutely great. As Sinclair Philip sat down with us, bringing out a beautiful bottle of Marechal Foch from Starling Lane Vineyards, the dialog mesmerized us and made us feel as if we had been on the dinner table at house with old associates – reminiscing, chatting, laughing and having fun with. What a memorable evening. The cod was buttery-smooth and tasted as if the boat had simply tied up on the Sooke dock. The lamb was tender, completely cooked, and bathed with a port reduction that was second to none. The presentation was eye catching, spirit lifting, and played with each certainly one of our senses.
As the four aspects of our rhubarb variations for dessert came out with a bit of Sauternes from France, a feeling of satisfaction overcame us. The cheeses from Hilary’s in the Cowichan Valley, along with the selection from Moonstruck on Salt Spring, were the final cap on a decadent night of great eating and wine. We had been happy, tantalized, pleasantly full and amazed by the meal we had simply taken in. And, as Louie and Sinclair bid us good evening, we felt like we were just heading as much as the guest room to open our suitcases and to benefit from the great hospitality.
Again in our room, we realized we had promised Sinclair that we would fill our out of doors deep soaker tub and sit within the cool night air, drinking within the sounds and sights of an ocean paradise. We filled in our breakfast order for the morning and hung the request on our door – dreaming already of the treats that awaited us. This we did easily, as we sipped port, threw our clothes to the flooring, and enjoyed what might only be termed a perfect evening.
As the light streamed by way of the curtains within the morning, a mushy knock came on the door. We opened it to a very polite and bright “Good morning!” Our breakfast was introduced in and placed on the table in the residing room. Sizzling coffee – robust and addictive-smelling, contemporary croissants – crunchy on the skin, mushy and chewy on the inside. French toast, bathed in fruits and syrup with contemporary squeezed orange juice. Scones, muffins, yogurt – the listing was endless and that home made household feeling returned.
As we lazed on the couch contemplating the rain and the tide pulling out we relaxed, learn, talked, listened to classical music and we enjoyed. One can only take pleasure in in such a setting with these folks around you – with this meals in your stomach.
